From our meal list
“Ground sausage, broccoli and pasta.” That short entry in our household meal list is the starting point. No outside recipe author or method accompanies it. The quantities and sequence below are a separately developed, untested formula.
The useful personal connection is the list we use to collect dinner ideas. The April pasta photograph is a different meal, rather than proof that I cooked this particular version.

Before draining, save a cup
Pasta water is easy to pour away before it has finished its job. In this dinner, the sausage supplies cooking juices and seasoning, while Parmesan and a little reserved water help coat the pasta. There is no separate sauce to make.
The water goes in gradually. Too little leaves the ingredients sitting apart; too much can turn a lightly coated pasta into a wet one. Keeping a cup beside the stove gives the cook room to adjust without committing the whole amount.
Broccoli shares the pasta pot for the final part of cooking. Floret size matters, so cut it evenly and check the texture before draining. A dish with so few main ingredients makes those small decisions visible.
Sausage and broccoli pasta
Estimated yield: 4–6 servings. Estimated total time: 30–40 minutes.
Proposed quantities and estimates. This version has not been tested.
Ingredients
- 12 ounces short pasta, such as penne or bowties
- 1 pound raw Italian pork sausage, casings removed if necessary
- 12 ounces broccoli florets, cut into bite-sized pieces
- 3 garlic cloves, minced
- 1 tablespoon olive oil, only if the sausage leaves too little fat for the garlic
- ½ cup finely grated Parmesan, plus more to serve
- 1 cup reserved pasta cooking water; use only what is needed
- Black pepper, to taste
- Optional: lemon wedges and red-pepper flakes
Method
- Bring a large pot of water to a boil. Cook the pasta according to its package, adding the broccoli for the last 3 minutes. Before draining, reserve 1 cup of cooking water.
- Meanwhile, brown the pork sausage in a large skillet, breaking it into small pieces. Cook it to 160°F. Spoon off excessive fat, leaving a little in the pan; add the optional oil only if the pan is dry.
- Lower the heat. Add the garlic and stir for about 30 seconds, without letting it burn.
- Add the drained pasta and broccoli. Pour in ¼ cup reserved water and toss over low heat.
- Remove from direct heat and stir in the Parmesan. Add more pasta water by the tablespoon until the cheese and cooking juices lightly coat the pasta.
- Finish with black pepper. Offer lemon and pepper flakes at the table.
Adjusting the finish
Add the reserved water gradually and stop when it gives the pasta the coating you want. The yield and water quantity remain untested estimates. Use the pork sausage specified here; poultry sausage has a different safe cooking temperature.
Recipe context and temperature guidance
Ground sausage, broccoli and pasta is named in the saved household meal list. The quantities and method below are an independently developed, untested formula.
Use a food thermometer. Poultry and reheated leftovers should reach 165°F; ground pork sausage should reach 160°F. FoodSafety.gov temperature chart.
Watch the coating, not just the pot
This proposed dinner has two visible textures to bring together: broccoli among the pasta and a light coating from the cooking juices, water and Parmesan. A plate can contain all the listed ingredients and still leave them feeling separate. The final toss is where the proposed method is meant to connect them.
For a first cook, the useful comparison would be the pasta shape, the broccoli size and the amount of reserved water actually used. Recording those choices would explain more than simply noting that the recipe needed “more sauce.” They are specific enough to repeat, while leaving the optional lemon and pepper flakes as table decisions rather than part of every serving.
